Basque Cooking Class at Mimo London
Great cooking course. Booked it for my boyfriends birthday and both of us thoroughly enjoyed it. Caroline and Fernando were so friendly and informative. The food and wine was great and portion sizes were plenty. I would highly recommend this as a group or couples activity.

A great cookery and dining experience

My wife was given this cookery session as a present and it totally exceeded her expectations, here is her description of the 5 hour session.

Located right opposite Southwark Cathedral on the edge of Bough Market, MIMO is wonderfully equipped and perfectly set up for hands-on cookery and dining. They offer a wide range of courses, this one features the Pintxos of San Sebastian: but it was so much more.

After a welcoming coffee, 10 of us donned chef whites and joined the tutor Vanessa in a show kitchen upstairs. Pintxos are basically tapas on skewers and we made two, featuring king prawns with a spicy "salsa", and olives with anchovies and pickled guindillias peppers (there is a small shop downstairs selling some of the gourmet ingredients). Then a tasty fish soup with clams; an amazing small dish using cep and girolle mushrooms, egg and a web of crisply fried potatoes; an orzo "risotto" which we ate with seared pork loin and relishes of red pepper and beer marmalade, and roasted garlic; finally a melting Basque cheesecake. All of us were busily engaged in every stage of the preparation and we ate the dishes accompanied by excellent Spanish wines.
All the ingredients were fresh and top quality, the kitchen equipment was first class and the facilities were modern and professional. Vanessa was a marvellous teacher who imparted information about the dishes and their and preparation in such a friendly and helpful way: I learned new techniques and inspiring dishes to recreate at home. I am a capable cook and have been to several other cookery courses but this was the best overall experience. The washing up is whisked away, the group gets to eat a delicious and convivial 5 * gourmet meal, and all the recipes are emailed to you straight away. I will be recommending courses at MIMO to friends and family- and I look forward to trying another one, next time as a couple.

Before attending this fabulous class, I didn't know much about Basque cuisine and culture but thanks to chefs Ander and Joseba I have now discovered a new vibrant culinary world, steeped in rich history and traditions, full of divine ingredients and fusions of flavour.

On arrival at 10am, I was greeted by the lovely and exceptionally welcoming Sarah, and had a choice of hot teas or coffees to start off with while awaiting the rest of the group; I opted for a strong flat white.

The decor and design of the kitchen and general building is brand new, clean and stunning.

Chef Ander walked our small group of 6-8 people through recreating some Basque pintxos classics, while giving us interesting anecdotes, history behind colloquial dish names, how Basque families prepare and eat meals traditionally etc., as well as giving us tips on cooking basics too - he was highly informative, super helpful and friendly to the entire group, ensuring everything was running smoothly with enough 1-to-1 time with everyone individually.

Highlights for me were the simple but astoundingly delicious Risotto with Idiazabal cheese, Basque cheesecake, Grilled prawns with skewers, and the interesting cept / porcini mushroom sauce on potato egg nests. The freeflowing wine pairings throughout were spot on, I particularly enjoyed the white CASTANO ORGANIC MACABEO 2018 and the experience of pouring salt wine from a height was exquisite.

This is hands down the best cooking class I have ever been to and has inspired me to visit and learn more about the Basque region/food. I would highly recommend it to anyone thinking about attending this class - you will not regret it! It was 5 hours long and time flew by.
