What a fantastic day, really enjoyed learning new skills from a top chef.
Nigel is really down to earth and good company, fantastic facilities and a warm atmosphere.
My course (seafood and shellfish) was a birthday present, I’ll definitely be going again.

What an amazing day. Nigel made me feel at ease with his teaching and shared lots of tips and tricks and bits of knowledge. Incredible the amount we got to do in just a few hours, and left with enough hand made pasta and carbonara sauce for a family of 4! Along with 4 tiramisu's, a tear and share focaccia and some pesto too!
Will definitely be going back for more and recommending to others - thank you Nigel!

Attend the Saturday Cookshop yesterday. What an amazing experience. Nigel was fantastic, so friendly and down to earth. I bought this as a Father’s Day present for my husband as something we could do together and would highly recommend it.
We made tomato, rosemary and parmesan focaccia, asparagus tartlets with hollandaise sauce, chicken chasseur with bacon wraps beans and barrel potatoes (he had another name for them which I can remember) and sticky toffee pudding with toffee sauce and cinder toffee. It all tasted delicious and we had the in laws round to help eat it. Even had left over pasty and chicken stock which we brought home and made pies with. Such an enjoyable day.

I have experienced a few reasonable cooking classes in my time, but nothing compares with the superb quality and value of Nigel's class. Given what is on offer, his pricing is spot on. I went for fish and shellfish and, among other top quality ingredients, dealt with a hefty lobster and crab. I was the only student. Nigel's friendly, informative and expert teaching plus his superb organisation crammed a lot of experience and techniques into one day. I lunched on a fired sea bass fillet (filleting by me) with an effortless lemon beurre noisette. There was a lot to do, but I worked managed it all without any sense of strain which, as an experienced and able teacher, he understood and planned for. I am still rubbish at producing a cheffy turned mushroom, though! Behind the dishes lies the importance of producing a good stock, plus valuable lessons in kitchen economy. The lobster bisque was amazing.....and I dunnit! I even managed the flambe bit without having hysterics. Sorry I forgot to take a pic of the sea bass before I filleted it. The skeleton went into a fish stock. Move over, Rick Stein!
I want to return next year and learn how to bone a chicken wing and a poussin. He has a very flexible approach to various likes/dislikes and needs and I'm sure would organise a day for specific interests. His knowledge and understanding of ingredients is first rate. Glad I bought his book, too. Whether you are experienced or a total beginner, his teaching skill will bring out the best in you.

A fantastic day with Nigel at the academy. Learned loads, ate loads and had fun. I received a gift voucher to spend a whole day making a dinner party menu which I then took home to share with family. Tasted beautiful and cant wait to do it again.

What a superb experience and what a lovely guy and Chef Nigel is. As a complete novice in cooking, my wife got me two trial days with Nigel Brown - Italian Experience & Nice and Spicy - and I was very nervous having no confidence in the kitchen. But with Nigel’s very chilled relaxed approach and extreme patience towards us, I could not believe how much cooking we got through effortlessly. Also his approach to no food waste was very important and all made sense as the days went along. Great facilities, quiet kitchen environment, loads of equipment, easy parking, the best teacher. You can just tell Nigel is very passionate about food. Cannot wait to go back for the Fish experience. Thank you Nigel and best of luck in the future👨🏻🍳Mark & Carmel

At the Brighton Foodies Festival we did the Thai cooking class. Little did we know that we would end up cooking our selves the most outstanding green chicken curry - all from fresh original ingredients. Making our own curry paste and own noodles. Such a delicious meal so much nicer than the fried offerings from all the foodie stalls.
Nigel was a great teacher and showed us the true authentic way to cook a green curry. I highly recommend this class.
We left with lunch aprons and a goody bag .. what a treat. Thank you Nigel and your lovely helper.
I do think you should advertise ‘ cook your own Thai green curry meal’ so people know they will end up eating what they make… so Yummy thank you.

What a fantastic day great host
Spent a fab day cooking with Nigel who imparted his knowledge and skills with great ease and personality.
Was a gift from my family and I would recommend as a great choice for gift or corporate event
And Brucie bonus is you get to take your food home 👍👍👍
Will deffo plan a return visit

I had a great half day Italian course with friends last weekend - Nigel was a great host and incredibly knowledgeable. The whole session was just great fun and we all said we'd happily go back again

My husband and I had a fantastic day on the Saturday Cookshop course, which we would thoroughly recommend. We made the most delicious dinner party menu that we then brought home and shared with friends who were delighted to be our guinea pigs! Nigel was a wonderful host, so knowledgeable, interesting and kindly shared lots of extremely useful cooking tips. We bought Nigel’s cook book and have tried a number of the recipes which have all been easy to make and very tasty.
Thank you Nigel for an amazing day, we will be back to future expand our cookery skills!
