One can get fairly close to the small Bridal Veil Falls (which is on the south end of the American Falls) from the north tip of Goat Island and also by crossing the foot bridge to Luna Island. But the problem is one can't really see it that clearly, other than the top where the river is spilling over the edge. The other two far larger falls are much more impressive.
That said, there appeared to be some wooden boardwalks down at the foot of Bridal Veil Falls -- perhaps that is the best place to get a good view of the smallest of the three Niagra falls.

Bridal Veil Falls is the smallest of the Niagara Falls, formed by the Moon Island in the river that divides the American Falls. Although it is located in the United States, you need to travel from the Canadian side or take a boat to fully appreciate its scenery. Compared to the other two waterfalls, Bridal Veil Falls is small but beautiful. Having said that, on the American side, you can take a wind tunnel trip to the bottom of the waterfall to experience the feeling of being hit by the water. The power is still amazing and should not be underestimated.

This is on the American side. If you can, view the waterfall both during the day and when it is dark because it is illuminated. And also from both countries.

Our grandchildren enjoyed their first visit to the Falls and the State Park. The day was a warm sunny October afternoon, perfect for walking and viewing the falls.

The best way of enjoying this falls would be going cave of the winds, especially in the winter when boat tours are not available. This falls is small compared to the other two, but its mist observed from the bottom is beautiful.

I can understand why this particular fall is called the Bridal Veil Falls. The natural flow of this waterfall looks like a flowing bride's veil. It's stunning and beautiful!

As mentioned below, stay on the main path and no steps/stairs. Otherwise there are at few but doable.

Is there enough time to do fall activities at Attitash and Wildcat in one day?

That had been my original plan. But we arrived late and had only the afternoon. My son had time to do everything at Attitash once (including the zip line) between 12:30 and 4. We also ate lunch during that time. If we had a full day, we could have repeated some activities. I would have been too exhausted to do anything a second time though! I imagine there are lines and waiting during the summer. We had none of those in late September.

There are tons of hotels there. We stayed on the Canadian side and it was beautiful. The saying goes "you play on the American side and stay on the Canadian side". I'm sure you will have no trouble finding a room with two queen sized beds
