You can't go wrong with World Heritage Cruises, out of Strahan. It was a great day out. Seats are numbered so you can walk around the boat without worrying about losing your spot. The boat leaves from the wharf in town, and returns to a wharf a little further along to enable a walk through the old mill area. As for accommodation, Strahan isn't a large town, so I'd suggest you book early if you plan to stay there. We stayed in one of the cottages on the waterfront, which are excellent and are a short, easy walk into the middle of town (2 minutes). A point to consider is that parking in town is limited. If you opt to stay in the motel on the hlll, you'll either have to drive down to town or have a steep walk home. I believe the cruises run every day of the year I'd suggest booking online before you leave home, to ensure you don't miss out, as January is the summer season. When you arrive in Strahan, you present your online confirmation and collect the tickets at the tour office in town before boarding the boat.
