We returned here to stock up on the local award-winning Poyoyo cheese, this cheese shop attached to the factory is the first cheese shop on the route into the mountains, if you continue a further 15mins into Grazalema there are another 3 amazing cheese producers. They are happy to let you try samples which really is the best way to taste the difference between the goat, sheep and the mixed goat and sheep’s milk cheeses. Also try the difference between the semi-curado and curado cheeses. We liked the mix of sheep and goat’s cheese and the semi-curado cheese which is what we bought as well as some lovely goats cheese logs and some goat and sheep’s cream cheese. The have a very informative guide to their cheeses for English speakers you can take away and you can have as much or as little cheese as you like as they will cut and vacuum pack it for you and even supply you with little gift bags for your cheese. It’s a lovely day trip into the mountains to buy this cheese and makes a lovely regional food gift for any foodies in your life. Also if you are going to buy local cheese this is the cheapest way to buy it by going to the factory itself as the mark up to buy in other stores is considerably more.

The heady smell hits you as soon as you walk through the shop curtains, there are numerous awards all over the walls and a deli counter with samples for you to try of 3 different types of cheese; sheep (oveja), goat (cabra) and a mixture of both (mezcla). Poyoyo cheese gets it’s name from the Payoyo breed of goat and the cheese here is sold as fresh and not aged at all (fresco) or aged for 2 to 3 months (semi-curado) or aged for over 4 months (curado). It would be helpful if they labeled these samples so you actually know what cheese you are trying and how aged it is. We bought a bit of each to try and compare them and also a bit of fresh goats cheese and some small goats cheese logs. It’s a lovely trip climbing the mountains to reach this factory, the views are spectacular and we really enjoyed seeing all the animals grazing freely and all the wild flowers. We had been meaning to try Payoyo cheese for a while and this trip through the mountains gave us the opportunity to do so.

Soy un querer exigente. El curado mezcla de cabra y oveja es inmejorable.
Todos buenos ( creo los he probado todos) pero la diferencia está en el mezcla

Muy buen trato y nos ofrecieron probar varios tipos de quesos, la señora que nos atendió nos explicó cada una de las opciones que teníamos, finalmente adquirido el mezcla curado y semi.

Voy a la sierra dos veces al mes, y considero obligada la visita a Payoyo en Villaluenga del Rosario. El queso de leche de Cabra Payoya y Oveja Merina es un referente en la cocina española y en la repostería.
La fábrica es pequeña pero bien organizada. Y el trato en el punto de venta es excelente y profesional.
Entre los quesos de Cabra en manteca, pimentón, salvado, aceite...destaca el semicurado de mezcla de Cabra y oveja. Este es un queso para todos los paladares.
Crema de queso, queso fresco y otros productos del entorno son puestos a la venta. Déjese aconsejar y lleve queso a casa, su familia se lo agradecerá.

No habia oido hablar de este queso y como ibamos a ver los pueblos blancos pasamos a comprar.
Muy rico y no excesivamente caro, el pueblo lo puedes evitar

No me entiendan mal, los quesos son en general buenos. Pero lo de Payoyo es una marca registrada y no quiere decir que estén hecho con leche de leche de cabra payoya.
pero ya que has ido hasta allí pues...compras, que es lo que ellos quieren.

Venta directa en el lugar de fabricación de los famosos quesos Payoyos. Tuvimos mala suerte y el día de nuestra visita no disponian de muchas de las variedades.

So to clarify we didn’t actually visit the factory (although we passed it on our way back from Ubrique). We sampled these wonderful Cabra cheeses (live goat cheese) while dining at El Muelle in Estacion Benaojan (see my TA review). It has an exquisite sharp taste with a firm texture (similar to a well aged cheddar)- perfect with a good Fino or Manzanilla. Anyway, we were complimenting Christa who runs El Muelle and she introduced us to the cheese chef who made it who just happened to be dining there at the time. Lots of Holas! and chit chat followed. We were very keen to get some back in the UK to share with family and friends. It transpires they do not ship to UK but they dropped off a Kilo for us to bring back. How’s that for service. If you visit the factory you can buy there.
If you are into “artisan” foods then this is a strong recommendation.
