Thank you very much for taking the time to review your dinner with us last night.
Our meat is aged for 28 days and then air-dried for an extra 5 which effectively remove all the moisture from the meat which accentuate the flavours, especially in a cut like the Rib-Eye which has a nice amount of fat in it which is the part that will have the most flavours.
Like i have said last night, it is a stronger flavour and not to everyone taste and I would have preferred giving you a different cut this time rather that you not enjoying your meal. Lesson learn, we will be more informative when we offer this type of meat in the future.
Again, my sincere apologies for not insisting for you to change your main course and for evening not being as pleasurable as it should have been.
You are right about the château Musar, this is really an incredible wine.
Please, do come again and ask for me to recommend your dinner and we will go through a few wines to match your selection.

We are indeed hiding in the back of the main entrance of the club quarter hotel, but are very conscious of how impressive it can be to walk across to us. But as you have done, it is a small step to take to enjoy our amazing bar and restaurant.
I was surprised that you mentioned paying £18.00 for a martini cocktail when we sell them with our house gin or vodka for £9.00. We do have a huge selection of premium gin and and a few vodkas as well but the highest price is £12.50. I suspect this was the cost of 2 martinis. However, if we have made a mistake on your bill and you have kept it, do please come and see us on your next trip to London and I will rectify this for you.

I am really sorry to read that you have not enjoyed our fix priced menu which is usually very well received. Cold vegetables on the side are not acceptable and I apologies they have been served that way, which is not our standard.
I am really disappointed that you have not enjoyed your lunch on that occasion and hope you will give us the benefice of the doubt and visit us again so that we can deliver you what we usually do in terms of standards.
